I could make up a moving story about how my mum used to bake them for me on cold winter days. It would make quite the background for this recipe. Instead, I will tell you the truth. The first time I tried this recipe was because I found the name so funny. After having a good laugh, I could truly appreciate the chewy deliciousness of this cinnamon-loaded sugar cookie.

Ingredients

  1. Preheat the oven at 180°C (fan 160°C)

  2. Combine soft butter and vanilla until fluffy

  3. Add 90g of the sugar and the brown sugar and combine.

  4. Add egg and half the cinnamon (1tsp) and mix until well uncorporated

  5. Add the flour, baking soda, and salt and combine.

  6. Form little balls and roll them in a mixture of the remaining sugar and 1 tsp of cinnamon.

  7. Bake for 12 minutes.

Note

  • Don't put the balls too close to each other as they will spread a lot during baking.
  • Don't be afraid to remove them from the oven while they still look soft, this will ensure they remain chewy.
