Mannele (Saint Nicholas’ Brioche)

We are officially in the festive season now, and it's the best opportunity to embrace our favourite traditions, obviously including food. I grew up with these delicious little brioches you eat on Saint Nicholas Day, and trust me, there’s nothing better than coming home on a cold day to the aroma wafting from the oven. No mercy for those little mannele!

  1. Warm the milk to 30°C (86°F).
  2. Add fast-acting yeast to the milk, mix well, and set aside for 10 minutes.
  3. Melt the butter and set it aside.
  4. In a bowl, combine both flours, sugar, and salt.
  5. Beat the eggs and add them to the dry ingredients. Also, add the milk-yeast mixture and melted butter. Combine well.
  6. Knead for about 5 minutes.
  7. Let the dough proof for 3-4 hours or until doubled in size.
  8. Flatten the dough with a rolling pin and cut shapes using a cookie cutter.
  9. Add an egg wash and raisins for the eyes.
  10. Let proof on a baking tray for about 10 minutes.
  11. Bake at 180°C (356°F) or 160°C (320°F) for fan ovens.
  12. Enjoy as is or dip half in melted chocolate for extra indulgence!
