Winter Biscotti
Biscotti are such a delightful treat to enjoy with a hot cup of coffee or tea. I’m particularly fond of the classic almond version, but one of my wife’s recent cosy reads inspired me to bake this winter edition, brimming with comforting flavours, perfect for a chilly frosty afternoon.

Preheat the oven to 160°C (320°F).

In a bowl, whisk the eggs and sugar together until the mixture becomes pale and fluffy.

Add the flour, whole walnut kernels, raisins, orange zest, and cardamom, mixing thoroughly to combine.If using whole cardamon seeds, remove the seeds from the pod and grind them just before adding to the recipe.

Shape the mixture into a log and gently flatten the top to ensure even cooking.The dough may be quite sticky at this stage. To prevent adding too much flour, we recommend shaping it using cling film.

Place the log on a baking tray and bake for 30 minutes.

Remove from the oven and allow it to cool slightly (around 5m) at room temperature.

Meanwhile, increase the oven temperature to 180°C (356°F).

Once cooled, slice the log into thin pieces, approximately 1 cm thick.For optimal results, use a serrated bread knife.

Arrange the slices on a baking tray and bake for 7-10 minutes on each side, or until golden brown.
