Invisible Apple Cake

One of my favourite ways to make the most of them is with an Invisible Apple Cake. This treat is all about layers of tender, tangy apples held together by a soft, almost custard-like batter. And then there’s that golden, caramelised top—rich, comforting, and everything you want from an autumn dessert. It's a simple pleasure that celebrates the best of the season.

Preheat the oven to 180°C (fan) or 200°C (conventional).

In a large bowl, whisk together the eggs, sugar, and cinnamon until well combined.

Melt the butter and stir it into the egg mixture.

Add the milk and mix until smooth.

Gradually sift in the flour and baking powder, stirring until fully incorporated.

Peel, core, and thinly slice the apples, then fold them into the batter.

Pour the mixture into a greased cake tin.

Bake for approximately 45 minutes or until the top turns golden and a skewer inserted comes out clean.
